M.Sc. Food Science and Technology is a 2-year full-time post-graduate course divided into 4 semesters. The program has been designed to train Food Engineers in understanding and applying latest scientific knowledge of the specialized field, acquiring professional familiarity with the various fields of natural and technical sciences and applying such professional food-related knowledge creatively in the different branches of the food industry.
As a branch of Applied Sciences, Food Science or Food Technology is primarily about fundamentals of Biochemistry and Chemical Engineering, an advanced exploration of the physical and biological nature of food items, manufacturing, treatment, preservation, processing, and distribution of food. principles of food processing, improvement of food quality for the general public and making the best use of food resources and minimizing waste of resources.
Packaged food items, whether in the supermarket or retail stores, are all a result of contributions from Food Scientists, Food Technologists, or Food Engineers.
Food is essential for all forms of life, and the majority of food items are biological in origin. It involves complex processes of Harvesting, Distribution, Processing, Storage, and Preparation.
The discipline essentially consists of concepts such as Food production and habits affected by urbanization and lifestyle changes worldwide, Allied Applied Sciences, Interdisciplinary approach comprising elements of Pharmacy, Biomedical Science, Translational Science, Organic, and Inorganic Chemistry, Biochemistry, Physical and Microbiology, Chemical, Nutrition, and Process Engineering, Composition and intricacies of food components like proteins, fats, minerals, carbohydrate, vitamins, and water.
Candidates wishing to apply for the course need to fulfill the following minimum eligibility criteria
Most institutes in India offering the course admit students based on their performance in a relevant entrance test. Some institutes also admit students based on the candidate’s obtained merit at the level of graduation, while some conduct their own entrance tests for offering admission. Admission process generally varies across colleges.
